Roasted Chicken Drumsticks with Garlic and Herbs
One of the first things I ever learned to cook was how to cook chicken drumsticks. These chicken drumsticks are tender, juicy, and gorgeously brown! The marinade that is used in this recipe is super versatile and can be used on practically anything else!
While chicken breast may often steal the spotlight, I’ve always preferred drumsticks. In fact, I could easily devour 3-4 of them in one sitting! I’ve been roasting and grilling drumsticks since I was 12 years old when my mom first taught me her special recipe, using a delightful marinade of lemon, mayo, garlic, salt, and black pepper, resulting in plump, tender, and golden brown drumsticks.
My mom’s grilling technique is equally beloved. Marinade the drumsticks and then generously slather them in BBQ sauce—simple and delicious!
Why Do We Marinate?
My mom always said, “Mila, it’s all about the marinade.” While I watched her cook more than I actively participated, I learned that marinades were essential for tasty meals. Whether it was a simple burger or a more complex dish, marinating was always part of the equation.
- Tenderizing: Marinades help tenderize meat, especially when using acidic components. However, be cautious; leaving delicate meats in acidic marinades for too long can result in an unappealing texture. Overnight is the maximum for chicken, and seafood needs even less time!
- Flavor: For me, the real magic of marinating lies in the flavor! Ingredients like garlic, shallots, onions, fresh or dried herbs, and citrus juices pack a flavorful punch.
- Versatility: The combinations are endless! Feel free to experiment with your favorite herbs and spices to change the flavor profile every time.
- Health Benefits: According to the Journal of Science, marinades can reduce carcinogenic compounds from high-heat cooking methods, effectively providing a protective layer while cooking.
Flavor Components
Returning to my roots, I consulted my mom’s method which included the classic Russian secret: mayonnaise!
- Mayonnaise: The key to juicy and flavorful chicken, it also helps with browning. An article from Food52 confirmed my mom’s intuition about mayo enhancing flavor and tenderness.
- Citrus: As a self-proclaimed citrus queen, I can’t resist adding lemon juice and zest for an explosion of flavor while also tenderizing the drumsticks.
- Alliums: Garlic, chives, onions—these aromatic veggies add incredible depth to the marinade. I used garlic, chives, and shallots in this recipe.
- Salt: The most vital flavor enhancer, salt draws out the inherent flavors of the chicken, finishing off the dish perfectly.
- Herbs and Spices: Go as simple or fancy as you’d like! I chose parsley and chives, and a few red pepper flakes for a subtle kick.

Make it a Complete Meal
The beauty of these chicken drumsticks lies not just in their flavor but also in the side dishes. You can create a one-pan meal by roasting them over potatoes or other root vegetables. My favorite combo includes onions and potatoes, allowing all the flavors to meld beautifully.
Pair with rice, mashed cauliflower, or a quick tomato and cucumber salad, or enjoy them solo, as my kids prefer!
